The Easiest Way to Make Odd Bits
| May 2, 2013 | Posted by Lindsey G. under Fats, Main Dishes, Real Food Sourcing, Soups |
If you are new to real food cooking, then you may or may not be aware of the fact that we practice nose to tail eating; meaning eating the entire animal. Why? Two reasons: 1) it makes grass fed meat affordable and 2) waste not want not. Just like anything else, you will get economies of scale when you purchase in bulk and that means buying a whole or a… more
Beef Tongue Flautas
| March 1, 2013 | Posted by Lindsey G. under Main Dishes |
Last Spring I purchased my first half share of a veal cow from a local raw milk dairy farm. Before I go on, please understand this wasn’t the proverbial veal of the 1980′s – this was responsibly raised veal from a farmer I know and trust. This bulk meat purchase has taught me true ‘nose to tail’ cooking and eating, and has been a delicious experience to say the least.… more
Taco Night

Eureka! I have found a dinner my whole family loves that includes all of the wonderful real foodie foods I want us to be eating! The dinner is so simple to pull together because most of it can be made ahead of time. This meal is as nutrient dense as you can get because it has so many components including healthy fats and fermented condiments. The point is to get… more
Salpicon for a Crowd (Mexican cold brisket)
| December 25, 2012 | Posted by Lindsey G. under Main Dishes |
Have you ever heard of ‘salpicon’? It is basically an amazing marinated cold brisket recipe with onions, tomatoes, chipotle peppers, cheese and cilantro. Amazing and totally reminds my of my hometown. This recipe came from my mother who contributed it to an old Junior League cookbook from El Paso, Texas, where I grew up. I still have this cookbook and decided a holiday open house would be the best time… more
Fun With Leftovers – Creamy Cashew Stir Fry
| December 18, 2012 | Posted by Lindsey G. under Main Dishes |
I love re-purposing leftovers and making a stir fry accomplishes another goal as well – to use up vegetables from my CSA in my fridge. Here I am using some leftover steak but you could really use any leftover meat for this recipe. I was experimenting with various flavors and it wasn’t quite right until I added a surprising ingredient – raw cashew butter. What a great combination of flavors!… more
Roast Bone-In Lamb Shoulder with Cinnamon and Fennel
| December 17, 2012 | Posted by Lindsey G. under Main Dishes |
I was interested in doing something fresh and new with the lamb shoulder roasts I have in my deep freezer. I lucked out on the inspiration front when I saw that fennel was in my CSA box this week. Building on the brisket recipe from last week which had such a great balance of sweet and acidic flavors with the maple syrup and cider, I decided to go with honey… more
Maple Cider Brisket
| December 7, 2012 | Posted by Lindsey G. under Hanukkah, Main Dishes |
I have tried many brisket recipes over the years and actually don’t love many of them. I used to make one with the famous onion soup mix but certainly can’t make that now given all the MSG and fake food nasty chemicals in it. I also make a mean southwestern style recipe which I will post at some point but that doesn’t ring for the holiday season. I needed something… more
Coconut Milk Braised Beef and Collard Greens
| November 27, 2012 | Posted by Lindsey G. under Main Dishes, Soups |
This is a favorite winter recipe in our house. You might think a child would balk at the vegetable heavy ingredient list – and believe me, at first my child did. But after she tasted the delicious sauce she couldn’t resist and has always ended up eating a heaping serving. You can make this with just the vegetables by omitting the meat. As an alternative to red meat, I have… more
Cilantro Pesto Crusted Salmon

Coconut Milk Poached Salmon

This delicious recipe is quick and easy to prepare. I absolutely love the Indian inspired spice combination of cardamom and cumin seeds. If you haven’t tried these spices before, I highly recommend you get some and try this recipe – you will not be disappointed! The best part about this recipe is that you can eat this hot or cold so it can sit out and wait for you. It… more
