Einkorn Snowflake Pull Apart Cinnamon Rolls

A stunning snowflake-shaped pull-apart bread made with fresh milled einkorn flour and filled with cinnamon, honey, and coconut sugar. This recipe uses a versatile master dough that can also be used for challah, buns, pizza, or donuts.

Ingredients

  • 1000 grams einkorn berries freshly milled into flour
  • 1 tablespoon salt
  • 1 tablespoon instant yeast
  • 40 grams vital wheat gluten
  • 1 1/2 cups lukewarm water
  • 1/2 cup raw honey
  • 1/4 cup olive oil
  • 4 eggs
  • Additional einkorn flour for rolling
  • 2 tablespoons butter softened, for filling
  • 1 tablespoon cinnamon for filling
  • 1 tablespoon coconut sugar for filling
  • 2 tablespoons raw honey for filling

Instructions

  • Make Master Dough:
    1. Combine all dough ingredients in a 6L plastic bucket using a dough whisk.
    2. Cover loosely with lid and let rest for 2 hours at room temperature.
    3. Use immediately or refrigerate for up to 5 days (overnight refrigeration recommended).
  • Shape Snowflake:
    1. Break off two orange-sized pieces of dough (about 1/4 of total dough).
    2. Roll each piece into a ball, then roll out into circles on floured surface.
    3. Place one circle on parchment-lined baking sheet.
    4. Spread with softened butter, sprinkle with cinnamon and coconut sugar, drizzle with honey.
    5. Place second circle on top.
    6. Cut into 8 wedges, then cut each wedge in half.
    7. Twist each piece outward to create snowflake pattern.
  • Bake:
    1. Cover with overturned bowl and let rest 30 minutes.
    2. Preheat oven to 350°F.
    3. Bake for 25 minutes or until internal temperature reaches 185°F.
    4. Cool on rack or serve warm.
