Fermented Apple Juice

A probiotic-rich fermented beverage made from fresh apple juice or store-bought apple cider. This simple ferment adds beneficial bacteria to your favorite fall drink.

Equipment

  • Juicer (optional)
  • Quart-size mason jar
  • Fine mesh strainer

Ingredients

  • 9 organic apples enough for one quart of juice
  • 1 teaspoon powdered culture starter or 2 tablespoons whey
  • 1 pinch sea salt

Instructions

  • Fresh Apple Method:
  • 1. Juice the apples using a juicer.
  • 2. Skim off as much foam as possible from the juice.
  • 3. Add culture starter (or whey) and salt to the fresh juice.
  • 4. Pour mixture into a clean quart-size mason jar.
  • 5. Secure lid tightly.
  • 6. Let ferment at room temperature for 3 days.
  • 7. Transfer to refrigerator.

Notes

Store-Bought Alternative:
- Can use store-bought apple juice or cider
- Choose juice without preservatives (ascorbic acid is okay)
- Unfiltered juice works well
- Follow same fermentation process
Storage:
- Keeps in refrigerator for about 1 month
- Fermentation continues slowly in fridge
Tips:
- Room temperature is ideally 68-72°F
- Taste may become more tart over time
- Organic apples recommended for fresh juice
- Some separation is normal; shake gently before serving
Variations:
- Try with spiced apple cider
- Can use different apple varieties
- Experiment with fermentation time for desired taste
