Fresh Milled Einkorn Animal Cookies

Classic animal-shaped cookies made with freshly milled einkorn and soft white wheat berries. These crispy, buttery cookies are perfect for kids to help make and are always a crowd pleaser.

Ingredients

  • 1 cup soft white wheat berries to be milled
  • 2/3 cup einkorn berries to be milled
  • 1/2 teaspoon salt
  • 1 cup grass fed butter softened (2 sticks)
  • 3/4 cup coconut sugar
  • 2 pastured egg yolks
  • 1 teaspoon vanilla

Instructions

  • Prepare the Dough:
    1. Mill the wheat and einkorn berries together to yield 2 1/2 cups flour.
    2. In a stand mixer, cream together softened butter and coconut sugar.
    3. In a separate bowl, mix flour and salt.
    4. Add egg yolks and vanilla to butter mixture.
    5. Slowly incorporate flour mixture into wet ingredients until dough forms.
  • Chill:
    1. Refrigerate dough for 3-4 hours or overnight.
  • Shape and Bake:
    1. Preheat oven to 350°F.
    2. Line baking sheets with parchment paper.
    3. Working quickly with small portions, roll dough between plastic wrap to 1/4 inch thickness.
    4. Cut with animal cookie cutters and press designs.
    5. Carefully transfer to prepared baking sheets.
    6. Bake for 10 minutes.
    7. Allow to cool completely to achieve crisp texture.
