I tried this recipe Sunday from the Eat Nourishing blog and it really was a gem. Definitely recommend – we ate the whole dozen in one sitting and guess what – not overly filling – just delicious! It is made with arrowroot powder (you can buy this at Whole Foods) oddly enough – so thankful there are people out there who are truly scientists who experiment on all these grain free recipes! I used coconut oil instead of butter just because it was easier (already melted). Added bonus – I turned the light on in the oven and my daughter loved watching them rise and ‘popover’! Let me know what you think when you try it. We put maple cinnamon butter on top – basically mix together 3 tbsp butter with 3 tbsp maple syrup and 2 tsp cinnamon – yum!
