What we ate today – 09/04/12

I didn’t do a lot of cooking today and thankfully we had leftovers of pretty much everything you see below.  I only made a fresh batch of mayo today and the kale chips.  Score 1 for having lots of things like kraut, pickles, babaganoush that last a while!

Breakfast:

DD (dear daughter): yogurt, applesauce, cinnamon, flax seeds, blueberries – a spoonful of kefir (going slowly now)

me: kefir and applesauce, fried eggs, kraut

 

Snack:

DD: mango

 

Lunch:

DD: bean taco with raw cheese on corn tortilla, guacamole, carrots, kraut, corn chips fried in coconut oil

me: salmon salad with mayo, arugula, pickles, babaganoush, corn chips

 

Snack:

DD: popcorn

me: kefir and applesauce

 

Dinner:

leftover salmon filets, brown rice, kale chips, creme fraiche sauce, leftover moussaka for some of us, babaganoush, pickles, kraut
