I made this amazing cilantro pesto this past weekend and thought it would be great on top of salmon.
Ingredients for the Pesto
2 bunches of fresh cilantro
½ cup crispy pecans
4 cloves garlic
Salt to taste
½ cup cold pressed extra virgin olive oil
Blend all of the ingredients together in a food processor and store in the refrigerator. I use this mixed with apple cider vinegar on salads or with this salmon recipe:
Spread the pesto on top of a filet of salmon – skin side up (I am using a large 1.5 pound filet but you can do this with portioned 8 oz filets as well) in an oven safe dish.
Broil on High for 5 minutes and then set the oven to 350 degrees and cook an additional 7-10 minutes until the salmon is translucent and flaky. There is no need to flip it.
