Here is what I packed my 4 year old daughter for lunch today:
- Leftover taco meat from last night (I added yellow squash this time!) made into a beef and cheese quesadilla on non-GMO corn tortillas
- Purple Kraut
- Kale chips
- A handful of corn chips fried in coconut oil (from the same source as the tortillas above)
- Creme Fraiche and salsa for dipping (yes my daughter likes salsa – and it is a bit spicy!)
