Need a fun way to make liver? Try these grilled chicken liver skewers. Many recipes call for searing or pan frying livers, usually with onions. I have found these recipes to be quite heavy, especially for the hot summer. My mission was to find a light and refreshing way to eat liver. I have found it: the lemon butter sauce adds a delicious brightness to the liver!
If you are wondering, here is why you should eat nutrient dense liver and also why it does not contain toxins. Liver is truly a superfood – so enjoy it once a week (if you can!).
Grilled Chicken Liver Skewers with Lemon Butter Sauce
Grilled Chicken Liver Skewer Recipe
Ingredients
- 1 lb. chicken livers, cleaned
- salt and pepper, to taste (where to buy)
- 1 Tbsp fermented soy sauce (where to buy)
- 2 Tbsp olive oil
Directions
Put the livers on the skewers (I like these steel skewers because you do not need to soak them in water in advance and they are reusable) – you will need four of them.
Preheat your grill to extremely hot!
Season the livers with salt and pepper and drizzle with the soy sauce and olive oil.
Grill for 2 minutes on each side. The outside will have a nice char but the inside will be left pink.
Lemon Butter Sauce Recipe
Ingredients
- 4 Tbsp pastured butter
- juice from 2 lemons
- 3 cloves of garlic, minced
- 4-5 sprigs of fresh parsley, chopped
Directions
Using a small butter warmer, melt the butter on low. Add the lemon juice, garlic and parsley and stir to combine.
Pour the sauce on the skewers and serve immediately. We had this with brown rice and roasted butternut squash and okra. It was delicious!
