I really have no idea how I thought to make this homemade broccoli and cheese soup the way I did but it is just so incredibly delicious I knew I needed to post it for later so I could make it again! I am pretty sure I saw that I had a frozen pint of queso dip I made a few months back from this homemade mexican cheese dip recipe from Food Renegade. Super delicious cheese…and then I realized I had a ton of broccoli and needed to use. Bingo – broccoli and cheese soup needed to happen that night!
This is seriously super easy and will be ready in about 15 minutes if you already have the homemade queso made. I like to make a batch of that recipe (which I got from Food Renegade here and it is super delicious!) and then store in the freezer in pint sized containers for later use. I dump it in frozen and hit start in my Instant Pot (what’s that?!)– could not be easier!

Homemade Broccoli and Cheese Soup
Ingredients
- 2 cups homemade queso
- 1 cup homemade chicken broth
- 3-4 cups chopped broccoli
- 1/2 cup jasmine rice (or any white rice will do)
Directions
Put all ingredients into a pressure cooker – I personally love my smart pressure cooker called the Instant Pot. Close the lid and press manual for 2 minutes. The pressure cooker will beep and begin to pressurize. The whole process should take about 10-15 minutes. It will beep when done and then I quick release the lid (carefully per the instructions!). Stir and mash up the broccoli a bit more and serve! Pretty easy right?
