I recently got a lovely gluten free mix and so of course I had to try some waffles with it! I still seem to have trouble eating a lot of wheat and so I like to mix in some gluten free items every once and a while. I was very turned off of many gluten free mixes before because they always had something in them I could not tolerate too well and it was hard to pinpoint what it was. So all that being said, I hadn’t tried a new mix in a long time because of this. Recently I was able to try a new product on the market and I have to say I LOVE it. The consistency is a dead ringer for the waffles I make with einkorn flour and I did not react to the grains in this version. You will of course have to try it for yourself but wow was it yummy and so nice to be able to eat a bunch of waffles with whipped cream the other day!
I started to follow the recipe on the box but it had some complicated directions…so being the simple and easy person that I am…ignored them and did what was easy. And it worked! Why do people create such complicated recipes when it isn’t necessary? I will never understand. Anyhow – here is the recipe that worked for me and fed 4-6 people easily. I added in my own personal touch to give it a nice sour type buttermilk flavor with the kefir. You can learn how to make kefir here. I am finally getting this recipe up because of Mother’s Day…if I want my husband to make these for me then I need to have it up on my blog for him to find the recipe! Enjoy!
Gluten Free Waffle Recipe
Ingredients
- 3 3/4 cups Gluten Free Mix (I use this one)
- 1 Tbsp maple syrup (I get this here)
- 1 Tbsp baking powder
- 1 1/2 tsp baking soda
- 1 1/2 tsp celtic sea salt
- 3 pastured eggs
- 1 Tbsp vanilla
- 1 1/2 cups whole raw milk (or low temp pasteurized!)
- 3/4 cup kefir
- 3/4 cup olive oil
- 3 drops Orange essential oil (optional but it does add some major pizazz!)
Directions
Mix all the wet ingredients together and then whisk in the dry ingredients. Pour onto your waffle iron (I use this one) and…voila…perfect gluten free waffles! I load mine up with fresh whipped cream (made with this amazing little contraption) and pure maple syrup and fresh berries!
