Einkorn Animal Cookies (fresh milled flour)

Unpopular opinion: cookies are good for you…when you use top notch ingredients like fresh milled einkorn, pastured eggs, and grass fed butter!
This recipe was a work out to make but lots of fun with my youngest son with these adorable cookie cutters/press. I got the base recipe from the old school Joy of Cooking cookbook because that is my go to for every kind of cookie you can imagine. I just modified it a bit to be better for us!
Fresh Milled Einkorn Animal Cookies
Ingredients
- 1 cup soft white wheat berries to be milled
- 2/3 cup einkorn berries to be milled
- 1/2 teaspoon salt
- 1 cup grass fed butter softened (2 sticks)
- 3/4 cup coconut sugar
- 2 pastured egg yolks
- 1 teaspoon vanilla
Instructions
- Prepare the Dough:1. Mill the wheat and einkorn berries together to yield 2 1/2 cups flour.2. In a stand mixer, cream together softened butter and coconut sugar.3. In a separate bowl, mix flour and salt.4. Add egg yolks and vanilla to butter mixture.5. Slowly incorporate flour mixture into wet ingredients until dough forms.
- Chill:1. Refrigerate dough for 3-4 hours or overnight.
- Shape and Bake:1. Preheat oven to 350°F.2. Line baking sheets with parchment paper.3. Working quickly with small portions, roll dough between plastic wrap to 1/4 inch thickness.4. Cut with animal cookie cutters and press designs.5. Carefully transfer to prepared baking sheets.6. Bake for 10 minutes.7. Allow to cool completely to achieve crisp texture.

Directions
In a stand mixer, cream together the softened butter and coconut sugar. In another bowl mix together the flour and salt. To the cream/sugar mixture – add in the egg yolks and vanilla. Then slowly incorporate the flour and salt mixture to finish the dough. Chill the dough in a refrigerator for 3-4 hours or overnight.
Using a rolling pin and some plastic wrap, roll out the dough in sections to about 1/4 in thick. You will need to work quickly so it doesn’t get to soft. Use the cookie cutters and press to make the animal designs and carefully place them on a parchment paper covered cookie sheet. This will take some time so be ready for your standing workout. My son kept himself occupied keeping all the cookie cutters and their presses together (it is like a matching game) and pressing each cookie with his chosen design.

Bake each sheet filled with cookies for 10 minutes at 350′ F. Allow to fully cook and they will become crisp! This recipe will make about 2 completely filled cookie sheets and can feed a crowd. We came home with no leftovers – they were a hit – super delicious!
