Directions
Mix all ingredients together into a 6L plastic bucket using a dough whisk. Cover lightly but not sealed with the lid and allow to rest on the counter for 2 hours.
You can either immediately use the dough or refrigerate for up to 5 days. For this snowflake pull apart cinnamon roll recipe I highly recommend allowing it to cold ferment in the fridge overnight.

When ready to use break off two orange sized pieces of dough. You will be using about a 1/4 of the dough you made. Put the rest in the fridge to use over the next 4 days for things like challah bread, hamburger or hot dog buns, pizza, or donuts. Yes you can make all of those things with this recipe (baking times vary).
Use some extra milled einkorn flour for your work surface and all over the dough to keep it from sticking. Roll each piece into a ball and then using a rolling pin roll out into two circles. Place one circle on a piece of parchment paper on a baking sheet. Spread some softened butter onto the circle in a thin later. Sprinkle abundantly with a tablespoon of cinnamon and then a tablespoon of coconut sugar. Drizzle some raw honey on top. Place the second circle on top of the first one. Cut into 8 pieces like a pizza. Then cut each slice into two pieces and twist each going out from the middle to make the snowflake design per the video below.
Allow to rest covered with an overturned bowl for 30 minutes.
Bake at 350 degrees F for 25 minutes or until the bread reads 185 degrees F on an instant read thermometer. Allow the snowflake pull apart cinnamon rolls to cool on a rack before slicing or just tear it apart warm and enjoy the whole thing right away!

That is beautiful! I don’t fully understand the curing and twisting part, as I cannot find the video.
